  • 900g sweet potato, (the variety that has white flesh with red skin)
  • 1 cup dark brown sugar
  • 1 teaspoon ginger, freshly grated
  • 1 cup all-purpose flour
  • 1 teaspoon vanilla
  • 1/2 teaspoon allspice (mixed spice)
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt

How to Make it

1. Step

Preheat the oven to 350°F / 180°C.

2. Step

Grease/oil a 9-inch round baking pan and set it aside.

3. Step

Peel sweet potatoes and roughly chop them into chunks.

4. Step

Add sweet potato chunks and coconut milk into a blender and blend into a pureé.

5. Step

Transfer the pureé into a large bowl and stir in dark brown sugar, spices and salt.

6. Step

Stir in flour to form a smooth batter.

7. Step

Pour the batter into the baking pan and bake for about 1 hour and 15 minutes, or until a toothpick entered in the middle of the pudding comes out clean.

8. Step

Let the pudding cool before serving.
