Cornmeal Porridge

One of the popular breakfast meals in the Caribbean is Cornmeal Porridge which is creamy, tastes delicious and is very easy to make.

  • 1 cup fine yellow cornmeal
  • 3 cups of water
  • 1 cup coconut milk
  • 1⁄4 teaspoon nutmeg
  • 1⁄2 teaspoon ground cinnamon
  • 1⁄2 teaspoon salt
  • 3 tablespoons condensed milk or sugar
  • 1 teaspoon vanilla extract

Step 1. 

Mix cornmeal in cup of water and set aside.

Step 2. 

Bring the remaining two cups of water and milk to boil and stir in the cornmeal mixture and salt.

Step 3. 

Cook for about 10-15 mins (keep stirring with a wooden spoon or whisk to prevent any lumps.)

Step 4. 

Add nutmeg, cinnamon, vanilla and sweetened condensed milk (or sugar).

Step 5.

Serve hot in a bowl or add fruits and nuts of your choice.
