Vegan Ackee & (Saltfish) Jackfruit

Original Flava has made Jamaica’s national dish Vegan friendly! And it still has the FLAVA! Jackfruit is an excellent substitute for saltfish because of its similar texture. Give it a try! It’s delicious!

  • 2 Green bananas
  • 2 large white potatoes
  • 1 small onion chopped
  • 3 spring onions
  • 1/2 red bell pepper diced
  • 1/2 green bell pepper diced
  • 165g tinned sweet corn
  • 4 tbsp. mayo
  • 1 tsp dried thyme
  • 1 tsp sea salt
  • 1 tsp black pepper

How to Make it

Step 1.

Firstly wash Jackfruit, cut hard rubbery ends off and break off stringy pieces and place in a bowl.

Step 2. 

Then add 1 tbsp of olive oil to a pan on high heat and add onions, garlic and scotch bonnet and saute for 2 minutes.

Step 3. 

Add Jackfruit to the pan, season with black pepper, salt, thyme, and pimento, mix together, and then cook for 10 minutes.

Step 4.

Then add mixed peppers and tomatoes.

Step 5. 

Drain Ackee and place in pan and season black pepper and thyme. Gently fold over and simmer for 5 minutes.
